Students taking Family and Consumer Sciences Education classes should have the opportunity to participate in FCCLA, a student leadership association.

Adult Roles and Financial Literacy (11-12) - 34.01.00.00.005

Strands and Standards
This course prepares students to understand human relationships involving individuals and families integrated with general financial literacy. Topics include career and workforce preparation; dating, marriage, and parenting; decision-making, communication, and self-awareness; money management, saving, investing; and individual roles and responsibilities within the family, community, and workforce. This course will strengthen comprehension of concepts and standards outlined in Science, Technology, Engineering and Math (STEM) education. Student leadership and competitive events (FCCLA) may be an integral part of the course. Students who complete the entire 1.0 course will fulfill the General Financial Literacy graduation requirement.

The Adult Roles and Financial Literacy (ARFL) 1.0 credit course will fulfill the .5 credit General Financial Literacy (GFL) graduation requirement, with the remaining .5 credit counting as CTE or elective credit. In order to fulfill the credit a student must pass the entire 1.0 course, as the General Financial Literacy standards are taught throughout the course. (Standards 1, 4, 5, 6, and 8 will be covered on Skill Certification Test #319 and Standards 2, 3, and 7 will be covered on GFL Test #4501.)

Apparel Design and Production 1 (9-12) – 34.01.00.00.090

This course introduces students to basic apparel design and construction skills. These skills prepare students for the exciting global apparel industry and entrepreneurial opportunities. Students will sew apparel and accessory projects. This course will strengthen comprehension of concepts and standards outlined in Sciences, Technology, Engineering and Math (STEM) education. Student leadership and competitive events (FCCLA) may be integrated into this course.

Apparel Design and Production 2 (9-12) - 34.01.00.00.092

Strands and Standards
Students will further strengthen and broaden apparel design and production techniques. In this course they design and construct intermediate level projects using various construction techniques. These skills prepare students for the exciting global apparel industry and entrepreneurial opportunities. This course will strengthen comprehension of concepts and standards outlined in Sciences, Technology, Engineering and Math (STEM) education. Student leadership and competitive events (FCCLA) may be integrated into this course.

Child Development (9-12) - 34.01.00.00.020

Strands and Standards
Students will understand the aspects of child growth and development, positive guidance techniques, and child-related issues. Learning activities, observation techniques, and lab experiences in working with young children may be included. This course will strengthen comprehension of concepts and standards outlined in Science, Technology, Engineering and Math (STEM) education. Family, Career and Community Leaders of America (FCCLA) supports student leadership and has competitive events that may be an integral part of the course.

Culinary Arts (11-12) - 34.01.00.00.170

Strands and Standards
Students will be trained for career opportunities in the food service/culinary arts industry. Students will have the opportunity to learn and practice safety and sanitation procedures, and to use and maintain commercial food service equipment. They will perform quantity food preparation as it relates to catering, bakery, restaurant, hospitality, and fast food business operations. This course will strengthen comprehension of concepts and standards outlined in Sciences, Technology, Engineering and Math (STEM) education. Student leadership and competitive events (FCCLA) may be integrated into this course.

Culinary Management (11-12) - 34.01.00.00.172

Strands and Standards
Students will receive additional training for career opportunities in Culinary Arts and the Hospitality Industry. Students will have the opportunity to learn and practice safety and sanitation procedures, and maintain food service equipment. Students will perform quantity food preparation as it relates to catering, bakery, restaurant, hospitality, and quick service business operations. Greater emphasis will be placed on employment skills, management operations, and business and marketing practices. This course will strengthen comprehension of concepts and standards outlined in Sciences, Technology, Engineering and Math (STEM) education. Student leadership and competitive events (FCCLA) may be integrated into this course. 

Early Childhood Education 1A (10-12) - 34.01.00.00.040

Strands and Standards
This semester course introduces students to child-related careers and the Child Development Associate Credential (CDA). Instruction is given regarding developmentally appropriate practices (DAP) and curriculum and facility design for young children. ECE lab training may be a part of the course. This course will strengthen comprehension of concepts and standards outlined in Science, Technology, Engineering and Math (STEM) education. Student leadership and competitive events (FCCLA) may be integrated into this course. Previous completion of the Child Development course is required. 

Early Childhood Education 1B (10-12) - 34.01.00.00.040

Strands and StandardsThis semester course provides students an opportunity to work with children in a professional lab setting. Instruction given includes: applying developmentally appropriate practices (DAP) and teaching lessons to children, maintaining a healthy environment for children, and developing positive relationships with children. Students will continue preparing for the Child Development Associate Credential (CDA). This course will strengthen comprehension of concepts and standards outlined in Science, Technology, Engineering and Math (STEM) education. Student leadership and competitive events (FCCLA) may be integrated into this course. The Child Development and Early Childhood Education 1A courses are required prerequisites. 

Early Childhood Education 2 (11-12) - 34.01.00.00.050

Strands and Standards
This semester or year-long course provides students with an opportunity to work with children in a professional onsite lab setting and to mentor the Early Childhood Pathway students in the prerequisite classes. Course instruction is a review of the ECE I (ECE I-A and I-B) models supported by the State Child Care Licensing Rules. The primary focus of this class is to apply and practice the ECE curriculum and State Child Care Licensing Rules through hands-on, onsite early childhood education training experiences. State Child Care Licensing Rules can be taught separately or integrated into applicable strands and standards. Students will also be given the opportunity to complete the steps and to apply for the Child Development Associate (CDA) credential. This course prepares individuals for careers and entrepreneurial opportunities in early childhood education. Experiences include program planning and management; resource and facility management; peer mentoring; supervising recreational and play activities; and preparing, implementing and evaluating learning experiences for children. Previous completion of the Child Development and ECE I (ECE I-A and I-B) courses is required. This course will strengthen comprehension of concepts and standards outlined in Science, Technology, Engineering and Math (STEM) education. Student leadership and competitive events (FCCLA) may be integrated into this course.

Early Childhood Intern (11-12) - 34.01.00.00.095

Strands and Standards
The primary focus of this class is hands-on, off-site early child development experiences. This course prepares individuals for careers related to early childhood education. Experiences include: program planning and management, resource and facility management, supervising recreational and play activities, preparing and implementing a large variety of learning experiences for children, the application of individual teaching skills, and preparation for a career and/or entrepreneurial opportunities. This is a zero funded course.

Entrepreneurship in Family and Consumer Sciences (10-12) - 34.01.00.00.100

Strands and Standards
This course allows students to develop skills and experience aspects of economics as they are practiced in the free enterprise system. Activities include organizing a small business, producing products and/or providing services, and managing a small business. The family and consumer sciences laboratories will be used to provide activity-oriented experiences for developing entrepreneurial skills, manufacturing products, and providing services. Student leadership (FCCLA) may be an integral part of this course.

Note: It is the intent of this course that these entrepreneurial concepts be incorporated within the framework of family and consumer sciences-related free enterprise experiences. It is anticipated that the business concepts should be introduced and integrated throughout the free enterprise experience to maximize student interest and impact.

Strands 1-6 Taught
This course provides students the opportunity to develop essential skills in the various
career pathways related to Family and Consumer Sciences (FACS). Students will explore and cultivate skills in food and nutrition sciences, childcare, interior design, clothing and textile construction, fashion design and merchandising, consumerism, entrepreneurship, family relationships, personal responsibility, and career and job-related tasks. This course will strengthen comprehension of concepts and standards outlined in Sciences, Technology, Engineering and Math (STEM) education. Student leadership (FCCLA) may be an integral part of the course.

Note: It is recommended that the FACS Exploration course be taught as a full semester (.5) credit course using all 6 strands. It may be divided into a two semester courses using the A/B Model described below. Recommended strands found in boxed areas are not required to be taught in the Integrated Model.

FACS Exploration B Model

Strands 3-6 Taught
This course provides students the opportunity to develop essential skills in the various career pathways related to Family and Consumer Sciences (FACS). Students will explore and cultivate skills in food and nutrition sciences, childcare, consumerism, entrepreneurship, family relationships, personal responsibility, and career and job-related tasks. This course will strengthen comprehension of concepts and standards outlined in Sciences, Technology, Engineering and Math (STEM) education. Student leadership (FCCLA) may be an integral part of the course.

Fashion Design Merchandising (10-12) - 34.01.00.00.145

Strands and Standards
The Fashion Design Merchandising course is an introductory course that teaches the concepts of entry-level business and fashion fundamentals. The following list of skill standards prepares the student in fashion merchandising with the fundamentals of: basic fashion concepts and marketing terminology, fashion cycles, key components of the fashion industry, retail merchandise categories, fashion promotion and fashion careers. This course will strengthen comprehension of concepts and standards outlined in Sciences, Technology, Engineering and Math (STEM) education. Student leadership and competitive events (FCCLA and/or DECA) may be an integral part of the course.

Fashion Design Studio (9-12) - 34.01.00.00.140

Strands and Standards
This course explores how fashion influences everyday life and introduces students to the fashion industry. Topics covered include: fashion fundamentals, elements and principles of design, textiles, consumerism, and fashion related careers, with an emphasis on personal application. This course will strengthen comprehension of concepts and standards outlined in Sciences, Technology, Engineering and Math (STEM) education. FCCLA and/or DECA may be an integral part of this course.

Advanced Fashion Design Merchandising (11-12) - 34.01.00.00.147

Strands and Standards
The Advanced Fashion Design Merchandising course is designed to provide the serious fashion student knowledge of the various business functions in the fashion industry. The following list of skill standards prepares the student in fashion merchandising with a working knowledge of promotion, textiles, merchandising math, selling, visual merchandising and career opportunities. This course will strengthen comprehension of concepts and standards outlined in Sciences, Technology, Engineering and Math (STEM) education. Student leadership and competitive events (FCCLA and/or DECA) may be an integral part of the course. FCCLA and/or DECA related activities and curriculum can be used as an approved part of all Family and Consumer Sciences classes.

Food and Nutrition 1 (9-12) - 34.01.00.00.150

This course is designed to focus on the science of food and nutrition. Experiences will include food safety and sanitation, culinary technology, food preparation and dietary analysis to develop a healthy life style with pathways to career readiness. Food and Nutrition 2 (9-12) - 34.01.00.00.160

This course is designed to focus on principles of food preparation, sports nutrition, consumerism, and career options in the food industry. The study and application of nutrition, sanitation, food sciences and technology in this course provides students with laboratory-based experiences that will strengthen their comprehension of concepts and standards outlined in Science, Technology, Engineering and Math (STEM) education. FCCLA may be an integral part of this course.

Food and Science (9-12) - 34.01.00.00.180

Strands and Standards
This course teaches scientific principles and how those principles can be applied to improve the health of individuals and families. Instruction is given concerning the physical, microbiological, and chemical principles that affect the food we eat. This course will strengthen comprehension of concepts and standards outlined in Sciences, Technology, Engineering and Math (STEM) education. Student leadership (FCCLA) may be an integral part of the course.

Foundations of Nutrition (11-12) - 34.01.00.13.185

Strands and Standards
This course is an introduction to the science of nutrition and the relationship of food intake and health. Nutrient requirements and food selection to meet those requirements are discussed. Students evaluate their own food intake, eating behaviors; learn to be informed consumers of food and nutritional information in our modern environment. Provide students with critical human life and nutrition information that will expand their understanding of science and also be personally applicable to their daily and life-long health and wellbeing in the modern environment through applied assessments, exams, and discussions. It will also serve as the foundation course for subsequent course work in the area of nutrition and satisfy a life science general education course requirement. Human Development (11-12) - 34.01.00.00.197

Strands and Standards
Human Development introduces the developmental stages of individuals across the lifespan. Students will study biological, cognitive, and social/emotional developmental changes of the individual in the context of the family and society.  It emphasizes and demonstrates the vital connections between theory, research, and application. This can be offered as a concurrent enrollment course. Student leadership and competitive events (FCCLA) may be integrated into this course. This course will strengthen comprehension of concepts and standards outlined in Sciences, Technology, Engineering and Math (STEM) education. 

Interior Design 1 (9-12) - 34.01.00.00.210

Strands and Standards
This course enables students to explore their creativity in the field of interior design. Identification of the elements and principles of design are emphasized. Other topics included are furniture arrangement basics, floor plan evaluation, area planning and careers. This course will strengthen comprehension of concepts and standards outlined in Sciences, Technology, Engineering and Math (STEM) education. FCCLA may be an integral part of this course.

Interior Design 2 (9-12) - 34.01.00.00.215

Strands and Standards
This course provides students the opportunity to develop skills in applying the elements and principles of design to interiors. Projects are integrated throughout the course to provide applications as the students’ study: architecture, furniture styles and constructions, surface treatments and backgrounds, design and function of space and lighting. This course will strengthen comprehension of concepts and strands outlined in Science, Technology, Engineering and Math (STEM) education. FCCLA may be an integral part of this course. 

Advanced Interior Design (11-12) - 34.01.00.00.010

Strands and Standards
This course provides students the opportunity to develop advanced skills in applying the elements and principles of design to interiors. Portfolio projects are integrated throughout the course to provide applications as the students continue their study of floor plans, color schemes, lighting, textures, fabrics, and furniture design and style. Appropriate computer design programs are used in this course. The students will explore the various career opportunities related to interior design. A coordinated project that allows applications of interior design skills in a residential, commercial, or school setting may be a component of this course. FCCLA may be an integral part of this course.

Life Management (10-12) - 34.01.00.00.220

Strands and Standards
This course is designed to prepare students with skills to live independently. Skills are developed to help students manage their needs in the areas of interpersonal relationships, housing, clothing, nutrition, and food. Management of time, money, and resources are emphasized in each area allowing students to be successful at home and in the workplace. FCCLA may be an integral part of the course.

ProStart 1 (11-12) - 34.01.00.00.255

Strands and Standards
The ProStart® I is a program of the National Restaurant Association Educational Foundation that introduces students to career opportunities in the restaurant and foodservice industry and provides them with foundational skills in culinary arts and restaurant management that will jump-start their post-secondary experience, in college and/or careers. In Utah, FCCLA may complement this course.

ProStart 2 (11-12) - 34.01.00.00.257

Strands and Standards
ProStart® II is a companion to ProStart® I from the National Restaurant Association Educational Foundation.

The ProStart® is a program of the National Restaurant Association Educational Foundation that introduces students to career opportunities in the restaurant and foodservice industry and provides them with foundational skills in culinary arts and restaurant management that will jump-start their post-secondary experience, in college and/or careers.

Prior to beginning ProStart® II, teachers should review safety, sanitation and kitchen essentials with their students found in the ProStart® textbook, “Foundations of Restaurant Management and Culinary Arts” level 1, in chapters 2-5.

In Utah, FCCLA may complement this course.

Sports and Outdoor Product Design 1 (9-12) - 34.01.00.00.060

Strands and Standards
Students learn basic design and construction skills using technical fabrics to make projects for the outdoor/sports industry. The skills will introduce and prepare students for employment opportunities in the outdoor/sports industry. This course will strengthen comprehension of concepts and standards outlined in Sciences, Technology, Engineering and Math (STEM) education. Sports and Outdoor Production Design 2 (9-12) - 34.01.00.00.092

Strands and Standards
This course helps students to understand human and career literacy that ties to university courses of study in human services.   Skill development will focus on career selection and preparation and the development of interpersonal skills.  Students will analyze school, personal experiences and academic achievement as it relates to the world of family, careers and community.  This course will strengthen comprehension of concepts and standards outlined in Sciences, Technology, Engineering and Math (STEM) education.  Student leadership and competitive events (FCCLA) may be integrated into this course.

This course is designed to focus on entrepreneurial opportunities and careers in design fields. Experiences may include pattern design, surface design, clothing construction and manufacturing, fitting and alteration, and interior fabrication. The study and application of textile sciences and technology in this course provides students with laboratory-based experiences that will strengthen their comprehension of concepts and standards outlined in Science, Technology, Engineering and Math (STEM) education.

Note: Students can repeat the course for credit as they work towards certification.

Young Parents/Grads (7-12) - 34.01.00.00.290

Strands and Standards
This course is for students who are or will be teen parents.  The emphasis in this course is Graduation, Reality, and Dual-Role Skills (GRADS).  This course addresses the pre-and post-natal needs of the parent and child, responsibilities of parenthood, financial management, nutrition and food, child care and guidance, job-seeking skills, and steps to being independent.  There is an emphasis on the realities of parenthood and the importance of preparation for the world of work.
